Crispy, crunchy roast potatoes. You may think it impossible to make them without the use of loadsof oil. I have been a fan of a roast dinner for as long as I can remember, and the roast potatoes are my favourite part.

I posted a syn free roast potato recipe years ago, but since then I have been playing around with it, and adding more seasonings to enhance the flavour and improve the crispiness.

I thought it was probably time I updated the recipe, and the photos! My mum actually made these roast potatoes, using my recipe, when we went over for dinner. The sunshine and my parents gorgeous garden made for a great photo!

Tips for getting it right

As this recipe doesn't use the typical layer of olive oil and basting, it's important to make sure the recipe is followed correctly to get the best results.

The stock needs to be a least half way up the potatoes. You may need to check it and add a little more if it dries out too quickly. The key is to keep an eye on it throughout.


I like to make up the seasoning mix, and add to the potatoes before I put them into the roasting tin. Make sure you also use hot stock to pour in the roasting tin.

You will need:

PotatoesAs many as you can fit in your tray. Usually 3-4 potatoes

1 pint/570ml of hot stock. I use 2 stock cubes with the pint of water to make up the stock

Low calorie cooking spray

Roast Potato Seasoning Mix:

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 stock cube, crumbled up

large pinch of salt & pepper

Method:

Peel the potatoes and chop to a medium roast potato size. Keep checking to make sure that there are enough for the roasting tin you are using.

Preheat the oven to 190 degrees/gas mark 5.

Par boil the potatoes for 5 minutes. Once cooked, drain the water away. Shake the pan to fluff the potatoes up.

Mix together the garlic powder, onion powder, crumbled up stock cube salt and pepper. Sprinkle this over the potatoes, in the drained pan, and mix well to get an even coating.

Add the potatoes to the roasting roasting tin and pour the hot stock over the potatoes, ensuring they all get a covering. The stock should reach half way up the potatoes, to ensure perfect crispiness. Spray the tops of the potatoes with a generous amount of low calorie cooking spray, and add another pinch of salt and pepper.

Place them in the middle of the preheated oven. Add another spray of low calorie spray after 20 minutes.

You will know the roast potatoes are ready because there will be no stock left in the tray and the potatoes will be crispy. I recommend keeping your eye on them during cooking. If the stock dries up too much, add a little more.
